How to Use a Hydrometer: Step by Step
Step 1: Calibrate
Float the hydrometer in distilled water at 60°F (15.5°C). It should read 0.000 (water has no alcohol). If it doesn't, you have a calibration problem. Check your manual—some have adjustment screws.
Step 2: Take Your Sample
Draw a small amount of distillate into your jar. Don't take it straight from the still coil—let it cool first. Hot liquid gives false readings.
Step 3: Check Temperature
Most hydrometer charts assume 60°F. If your liquid is hotter or colder, apply a correction factor. There are apps and charts for this. Temperature matters more than most people realize. A 10°F difference can throw your reading off by several proof points.
Step 4: Float the Hydrometer
Gently lower the hydrometer into the liquid. Don't drop it—it can hit the bottom and crack. Spin it gently to dislodge any bubbles clinging to the stem. Bubbles make it float higher.

Look at the liquid line against the hydrometer scale. Read from below (the bottom of the meniscus), not the top. This is where people screw up most often.

Once you know your current ABV and your target ABV, you need to add water. The math:

Example: You have 1 liter at 75% ABV and want 40%.
(75 / 40 - 1) x 1 = 0.875 liters of water to add.
You'll end up with 1.875 liters at 40%.
Always add water to the alcohol, not the other way around. The exothermic reaction can cause boiling and splashing.
Common Mistakes That Ruin Readings
- Ignoring temperature — This is the biggest error. Hot liquid reads lower than it actually is.
- Reading from above the meniscus — Always read from below.
- Using a dirty hydrometer — Oil, residue, or old liquid on the stem changes buoyancy.
- Testing too early — If the distillate is still warm from the still, wait. Condensation on cold glass also throws things off.
- Assuming uniform cuts — The first run from a still isn't 80% all the way through. It starts low, peaks, then drops. Test each jar separately.
When to Test During Distillation
You should test at these points:
- Before the run starts — Get a baseline of your wash strength.
- Throughout the run — Check proof at regular intervals to track when heads end and tails begin.
- After cuts are made — Confirm each container is at the proof you expect.
- After dilution — Verify your final product hits the target ABV.
Professional distillers test constantly. Amateurs test once and hope for the best. Be the professional.
What About Digital Proofers?
Digital alcohol meters exist. They use oscillation frequency to calculate density, then convert to ABV. They're accurate, fast, and expensive (usually $200+).
For hobbyists, they're overkill. For anyone running a micro-distillery, they're worth the investment. If you're making more than 50 liters regularly, look into one.

Testing alcohol content isn't optional. It's the difference between knowing what you're drinking and gambling with your health.
A decent hydrometer costs less than a good bottle of whiskey. There's no excuse for skipping this step.
